Get Ready for the Pool or Beach

When you're planning a trip to the pool or beach, being prepared is the key to a relaxing day of fun. If you'll be at a day spa, chances are you'll have a wonderful selection of services to choose from. Typical day spa services include pedicures, massages, facials and even body treatments. These services can be a great way to get you ready for swimsuit season. One thing that is a necessity for any day spent relaxing by the water is a delicious summer snack recipe. Of course, if you're going to be lounging on the beach or next to the pool, you certainly want something that is easy to serve as well as being a no-fuss finger food. Casual, healthy, refreshing snacks are perfectly suited for this type of environment. One great recipe is a delicious Greek Salad Skewer. You'll need 16 round toothpicks or, for a festive touch, use 16 party picks. Other ingredients you'll need are an English cucumber; ¼ pound of Feta cheese, cut into 16 small cubes; 8 Kalamata olives, pitted and cut in half; 8 cherry or grape tomatoes, cut in half; 2 tablespoons extra virgin olive oil; kosher salt and freshly ground black pepper. Cut four ½" slices from the cucumber. Cut each slice into quarters. Place on a plate and sprinkle with salt and pepper. Top each cucumber piece with a piece of Feta cheese and half of an olive. Using a toothpick or party pick, skewer a tomato, then carefully skewer the cucumber, Feta, olive stack. Arrange picks on platter and drizzle with olive oil. Sprinkle lightly with salt and pepper. A fun summer drink recipe to go with your Greek Salad Skewers is a refreshing Watermelon Cooler. In a blender, combine 3 cups of cubed watermelon chunks that have been chilled with 1 cup of coconut water, the juice of 1 lime and a handful of ice cubes. Blend until mixture is smooth. Serve in chilled mason jars with a watermelon wedge for a garnish. This refreshing summer drink recipe is easy to make and incredibly delicious.
