Have Your Cake & Eat It Too This Holiday!

At the day spa, we love to spend holidays with friends and family. Unfortunately, this usually means that most holiday parties and family events are based around comfort food, indulgent desserts, and alcoholic drinks which are loaded with calories.
However, at our day spa, we are focused on helping you be the best version of yourself. This includes eating healthy even during the holidays. In an effort to help make it through the holidays without packing on the pounds, our spa has found the most delicious low-calorie cake recipe. This healthy living recipe will feel as though you are really indulging without the extra calories. **In order to cater to the needs of all of our spa clients, this cake recipe is vegan.
Healthier German Chocolate Cake
Who doesn't love a good German Chocolate Cake recipe? A moist chocolate cake topped with coconut laden sweet frosting. Delicious! Why not try a low-calorie cake this year? Our version of this healthy living recipe calls for:
Ingredients
1 cup plain soy milk
1/3 cup coconut milk (lite coconut milk may be used)
1 1/4 cups sugar
1 teaspoon vanilla extract
1/3 cup cornstarch whisked into 1/4 cup water
2 1/2 cups sweetened coconut flakes
1 1/2 cups chopped pecans
After you have collected all of your ingredients:
Instructions:
1. In a medium saucepan, mix the soy milk, coconut milk, sugar, and vanilla together.
2. Add the cornstarch mixture and cook over medium-high heat, stirring constantly, until mixture boils and thickens. Cook for one minute after it boils.
3. Remove from heat and stir in coconut and pecans.
4. Allow to cool for about 10 minutes (mixture should still be warm) before spreading on cake.
**This recipe prepares a two-layer 8-inch cake.
